Since I’m somewhat of a nutrition fanatic, Dot Organic piqued my interest but realistically speaking, the pool of attractive domains isn’t exactly large.
Dot Vegas is another interesting one, especially in light of the fact that geos have performed reasonably well thus far. Will be interesting to see if we’ll be able to say the same thing about Dot Vegas.
As far as the other ones are concerned sure, I’d love to own a lot of the “best of the best” domains but again, the main issue is represented by the fact that the pool of let’s call them investment grade domains isn’t very large.
Therefore, while it may seem that domainers have a lot of choices now that so many new gTLDs are going live, the truth is that the pool of genuinely attractive domains isn’t exactly impressive and in most cases, these domains will not be available at the beginning of the GA phase.

You can’t buy organic unless your registered with an organic body, to much paperwork

.newTLDoversaturation Its getting ridiculous. No one will remember so many TLDs enough for them to make a longterm impact over dot-com.

I registered a .organic domain. I should get it but am not 100% sure since it is in still in the verification process.
